THE GEELONG BOAT HOUSE SEAFOOD SALAD:
Serves 1 person
3 x skewers on grill – each skewer has 1 x prawn, 1 x scallop, 1 x Atlantic salmon cube
Grill 4 pieces calamari
Salad: A large handful salad mix, approx. 2 x teaspoons chopped roasted capsicum, small amount of avocado pieces, scatter 5-6 pieces cucumber and Spanish onion, 4-5 cherry tomato halves (Dress with oil & vinegar salad dressing)
Arrange skewers on top, calamari pieces around edge.
Sprinkle raspberry dressing very sparingly (very strong flavour)
Put 2 x tablespoons mango salsa on top
Place small amount of julienne vegie straws on top.
